INGREDIENTS
FOR THE DOUGH:

  • 1 large egg
  • 1 tablespoon powdered erythritol
  • 1/2 teaspoon pure vanilla extract
  • 1 1/4 teaspoon baking powder
  • 1 1/2 cups low moisture, part skim shredded mozzarella cheese
  • 2 ounces cream cheese
  • 1 cup plus 1 tablespoon blanched almond flour (I use this brand)

FOR THE FILLING:

  • 1 1/2 tablespoons cinnamon
  • 1/2 cup chopped pecans
  • 5 tablespoons butter, melted
  • 1/2 teaspoon maple extract (get it here)
  • 1/4 cup brown sugar erythritol (I use this brand)

FOR THE GLAZE:

  • 1/2 teaspoon maple extract
  • pinch of sea salt
  • 1/3 cup heavy cream
  • 1 tablespoon powdered erythritol
  • 1/2 teaspoon pure vanilla extract

INSTRUCTIONS
MAKING THE DOUGH:
