Crock Pot Fiesta Lime Chicken

This Crock Pot Fiesta Lime Chicken is an easy low carb crock pot chicken recipe with an incredible creamy sauce.

INGREDIENTS:
Marinade- 1 hr to Overnight Before Cooking

  • 3 lbs boneless, skinless chicken
  • 1 cup chicken broth
  • 1/3 cup soy sauce
  • 3 tbsp sugar substitute
  • 3 cloves minced garlic
  • 1 tsp liquid smoke
  • salt to taste
  • 1 (optional) zest of a lime
  • 4 limes- juiced
  • 1/4 tsp fresh ginger

Dressing- After Cooking

  • 1 cup mayo
  • 1 cup sour cream
  • 1/2 cup salsa
  • 1/4 cup chicken broth
  • cajun seasoning to taste (1-3 tsp)
  • 1 tsp cumin
  • 1 tsp dried parsley
  • hot sauce to taste (1+ tsp)
  • 1 cup shredded cheese of choice
  • Garnish- Limes cut into wedges

INSTRUCTIONS:
Marinade (To make at least an hour before cooking or even the night before.)

  1. Place the chicken in a container that can be air tight.
  2. In a bowl, combine all of the marinade ingredients and pour over top of chicken.
  3. Seal container and shake well to coat chicken entirely.
  4. Marinate in the fridge for at least and hour or up to overnight before slow cooking.

Cooking the Chicken After Marinading

  1. Drain the chicken and place into a 6 quart slow cooker. No additional liquid is needed. Chicken will produce its own juices.
  2. Cook on low for 4-6 hours or until fork tender.
  3. Drain chicken and place back into slow cooker.

Adding Dressing After Cooking

  1. Mix together dressing ingredients except cheese and pour over top of chicken.
  2. Stir chicken to coat.
