WEIGHT WATCHERS CHINESE SHRIMP AND BROCCOLI STIR FRY

INGREDIENTS

  • 1/4 cup brown sugar unpacked
  • 1 cup chicken broth
  • 1 tablespoon cornstarch
  • 1 tablespoon canola oil
  • 1 1/2 pounds shrimp deveined and shelled (21-25 count)
  • 2 cups broccoli florets
  • 3 garlic cloves minced
  • 1 tablespoon ginger minced
  • 2 tablespoons water
  • 1/4 cup soy sauce
    WEIGHT WATCHERS CHINESE SHRIMP AND BROCCOLI STIR FRY

INSTRUCTIONS

  1. Add the canola oil to a large skillet (with a cover) on high heat.
  2. Add the shrimp and cook for 2 minutes or until just cooked through on both sides.
  3. Remove the shrimp, reduce the heat to medium-high and add in the broccoli, garlic and ginger and toss well.
  4. Cook for 30 seconds until you can smell the garlic and ginger, then add in the water and cover (to steam the broccoli).
