Weight Watchers Veggie Loaded Mac N Cheese


  • 1/2 yellow pepper
  • 1/2 green pepper
  • 1 cup yellow corn
  • 8oz elbow noodles (gluten-free)
  • 1 cup low fat shredded colby jack
  • 1 cup fat free milk
  • 1/2 red bell pepper
    Weight Watchers Veggie Loaded Mac N Cheese


  1. Cook macaroni al dente. Rinse with cold water so it doesn't get soggy.
  2. Saute veggies together in a large skillet.
  3. Combine with cooked macaroni, fat free milk, and 1/2 cup cheese
  4. Spread into casserole dish, cover with remaining 1/2 cup of cheese.
