Keto,Low Carb-Fajita Salad with Steak

Ingredients
Fajita Salad Dressing

  • 1/2 teaspoon kosher salt
  • Pinch of cayenne pepper
  • 1/2 cup olive oil
  • 1/3 cup freshly squeezed lime juice from 2 to 3 limes
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder

Fajita Salad

  • 1 pound flank or skirt steak
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon sweet paprika
  • 1 1/2 tablespoons olive oil
  • 1/2 medium red onion thinly sliced
  • 2 medium red or orange bell peppers thinly sliced
  • 1/2 teaspoon kosher salt plus more for seasoning
  • 1/4 teaspoon freshly ground black pepper plus more for seasoning
  • 1 medium romaine lettuce heart about 8 ounces, chopped (I used red tipped romaine)
  • 2 cups grape or cherry tomatoes halved
  • 1 medium avocado sliced

Instructions

  1. Make the dressing: Whisk all the ingredients together in a small bowl until combined and emulsified; set aside.
  2. Make the salad: Heat a 10-inch cast iron skillet over high heat for about 10 minutes; the pan should smoke just a bit when it is properly heated. Meanwhile, liberally season the steak with salt, pepper, cumin, and paprika on both sides.
